If tortillas are uncooked they tend to show signs of mold a bit faster then pre-cooked tortillas. Store bought cooked tortillas if stored properly can be stored for up to a month in the fridge, where uncooked tortillas if stored properly can last up to three weeks.
I don't know I was looking for this answer as well because I just ate one that was best before Jan 4 2012 and it is currently May 16 2012 so about 5 months from when they would have been made. They look and smell perfectly good I just toasted it in a frying pan to make tortilla chips for hummus it was delicious. Anyone else?

To heat a flour tortilla, heat a skillet (one that is big enough to fit the tortilla in) on a stovetop and put the tortilla in it. It doesn't have to be heated for very long.

Yes, Dough can be be put in the refrigerator as long as you cover it very good. Depending on the dough, if you don't cover it well it will change colors. cookie dough can be put in the fridge to chill if you cover it with food wrap (not aluminum).
Three weeks is a bit long to try to keep a yeast dough fresh in the fridge. The yeast may have died off and the flavor might not be what you would hope for.

Depends on the dough? Any dough with eggs in the mix will spoil after 4 hours, you risk bacteria growth. If its canned dough if it sits out for too long the texture canges and wont rise properly. You'll end up with flat biscuits or flat bread.
Cover it in sran wrap and if your putting it in a plastic container i would recomend spraying a little oil on it or else the dough sticks on to the container and it becomes a mess when it comes to cleaning it
