If you look inside of a thermos you will see metal. This absorbs the heat or the cold and keeps it that way for as long as the contents are in the thermos.
The insulation of a thermos slows the transfer of heat into or out of it. So if there is a hot liquid inside, it cools down more slowly, and if there is a cold liquid inside, it warms up more slowly.
