In the truest sense, the true Sabbath is Jesus Christ (Matthew 11:28-30).

The Sabbath day which is a Saturday was given to the Israelites as a sign (Ezekiel 20:12).

It was the Christians that stopped observing the Saturday Sabbath opting instead to just observe Sunday. It is unclear when exactly this happened, but it was more than likely the non-Jewish Christians and within the first century. In the book of Acts we read that the Christians at that time observed both the Sabbath , where they would go to the temple and to the synagogue, and Sunday, where they would gather in each other's homes (Sunday being "the Lord's day"; the day of Christ's resurrection). However, the earliest Christians' observance to the Saturday Sabbath was due to their tradition, as opposed to their religious obligation. Paul later wrote that we should not let anyone pass judgment on us with regard to a Sabbath (Colossians 2:16). Paul also wrote that if one person esteems one day as better than another, while another esteems all days alike, each one should be fully convinced in his own mind. He continued on the one who observes the day, observes it in honour of the Lord (Romans 14:5, 6).
