In the old days, before railroad replaced them with a FRED (Flashing Rear End Device)
Cabooses were used to:
-Provide shelter for the rear brakemen
-Provide an office for the Conductor to do paperwork en route.
-Allows the Conductor to observe the rear end of the train for potential safety hazards.
-Gives control of the entire train's brakes to the conductor.
The caboose of something is the back end, so if you say 'the caboose of the train' it is the back car of the train, or if you were to say 'the caboose of that horse' you would be referring to it's rump.
