Bridles
Bridles are used to guide the horse or pony, as the reins are attached to the bit which goes into his mouth. If you tug gently on one side, the horse or pony will turn in that direction. Bridles can also be used to attach blinkers which can be helpful on a busy road. Blinkers cover the side of the eyes so that the horse can't see traffic and therefore does not spook at vehicles and bikes. You can also attach martingales to a bridle. The other end of a martingale clips or Velcros onto the saddle girth and stops the horse or pony throwing its head up.
Saddles
Saddles help the rider stay on, as they can balance themselves in the stirrups and grip with their knees. If there wasn't a saddle, riders could easily slip off. Girths are provided to hold the saddle on. There are a range of saddles such as jumping - useful for getting or knees into grip, dressage - a comfy saddle for sitting work and general - a normal saddle for all differnet types of riding!
Yes, the equitment for riding a animal like a saddle, bridle etc is called tack.
From April Reeves, Horseman's U.com: Either. You can ground drive a horse first, which would entail using a bridle and surcingle. Or you can use roundpen, Natural Horsemanship or 'western' methods, where you get the horse comfortable with the saddle first and desensitize him, before the bridle. I have used both methods, depending on the future use of the horse. Both work (under professional hands) but will achieve slightly different outcomes.
horse, track, race, whip, saddle, bridle, jockey, hooves, nostrils...etc.

Saddle, saddle pad, martingale, breast collar, girth and stirrups (both attach to the saddle). Leg wraps are optional and are usually just used at shows. Bridle, reins (attached to bridle) and halter.
Tacking up is when you saddle and bridle a horse
Go to the harness room and select a saddle by clicking on it. Put it in the inventory and click on the horse. Click on the saddle in the inventory and when your mouse turns into the saddle, click the horses back. If there's no saddle in the harness room, go buy one at the shop. It won't go on unless you have a saddle blanket under it. Hope this helps. :)
You have to hire a saddler for a saddle and bridle, and a farrier for horseshoes.
