Buy a copy of Fjestad's Blue Book. "Field model" is a general term that is usually used to describe a basic Grade, or standard grade of Shotguns. Sometimes the manufacturer themselves will use the term, such as the Browning Citori Field Model. This would in most all cases be a Grade I Citori. There are hundreds of different Browning Models with variations that it is impossible to quote a value. Model, guage, age and condition are all factors in determining value. Try looking up more specific information in the Blue Book at the link below.
