The original nonstick cookware was seasoned cast iron cookware. This has a layer of cooked on vegetable oils called the "seasoning" that prevents sticking of food. However these are very high maintenance and if not handled properly will rust, destroying the "seasoning".

The first easy to use and thus popular nonstick cookware was coated with DuPont's Teflon plastic. However this scratched, eventually flaked off, and at high temperatures degraded to produce toxic gasses.

To solve the problems with Teflon (which was soon banned in cookware) manufacturers tried many things including: high temperature factory baked on vegetable oil coatings, alternative plastics that are more robust than Teflon, trade secret coatings, ceramics, etc.

Currently the most successful coatings for nonstick cookware are ceramics.

Nonstick is a coating of the substance "Teflon", it is easily scratched so one must use heatproof plastic or wooden utensils in the cookware coated with it.
