There is a small device available anywhere kitchen utensils and accessories are sold called a "garlic press". It is designed especially for the purpose. The down-and-dirty chef's "quickie" way of crushing garlic is to lay a broad knife blade or cleaver blade on the garlic cove, and smack the flat blade sharply with your hand. Smack the edge of the blade away from the sharp edge, of course.

1/2 cup olive oil 4 cloves garlic While frying garlic in the oil squash them with the back of a fork. This releases the flavour. Fry the garlic until golden brown. You must have the pasta cooked drained and in a serving bowl ready. Remove the garlic and pour the oil immediately over the pasta and mix in well. The secret is how quick you can get the oil over the pasta.

Any hard-skinned, orange-fleshed squash works. A cheap one that can easily be substituted for pumpkin is butternut.

Fermented garlic is used in complementary medicine. Aged garlic contains many sulfur compounds that can improve heart health.
