Skin mainly. It's the most waterproof structure many organisms have. Of course, many animals also need to protect their skin from drying out by keeping wet, like frogs and slugs. ^^

Mummification is the process of preserving a body by removing organs, drying out the flesh, and wrapping it in bandages. This practice was commonly used in ancient Egypt to prepare bodies for the afterlife.

First the organs were all removed then the body was wrapped. Salt was then packed around it to speed the drying. After the body was dry the salt was removed to prevent it from damaging the finished mummie.
