A harsh bit is not the solution for a horse that bolts. Proper training is.

Disposition in a horse means the horse is willing to learn; the horse is not prone to biting, rearing, bucking, bolting or kicking. A friendly willing horse.
Its is not the "kind" of horse that determines the type of bit you should use it is the discipline and training level of the horse that determines it. A full cheek snaffle should be used on a horse being ridden english. It is a fairly mild bit that can be used on horses of all training levels. The cheeks pieces are there mainly to prevent the bit from slipping from side to side in the horses mouth but it does provide a bit more action in the horses mouth than a loose ring snaffle.
I believe you will need to worry a lot more than what kind of bit to use to control your "stubborn not-listening" horse. You may need to get an experienced horse trainer or behavorist involved to really get to the bottom why your horse is being this way and what can be done, besides getting a new bit, to fix it. Your horse, for instance, could be acting dominant over you and you haven't realized it yet.

It depends on a number of things. If your horse is flighty, prone to spooking, stubborn, or a stallion, a shank bit, a curb bit, or a tom thumb bit may be in order. However, if he is easygoing, laid back and responsive, a snaffle bit may be used.
Have the rider get off the horse immediately and try getting a more experienced rider to train the horse, or turn out the horse before riding to get that energy out. or more training with you to get the basics.

You are searching in the wrong place. you should never use any kind of equipment to substitute for training. Forget the bit, train your horse, or get someone who can.
Try doing an exercise kind of like a shoulder in. That helps my horse do better. It is a great exercise for a everyday workout. It's has improved my horse's dressage by a lot.
Probably a curb or something with shanks, depending on what exactly your doing. :)
