There are many traditional foods prepared for the Christmas season in Spain. Spanish "turron" (a nougat candy) is sold in thick slices and originally was made with almonds and honey. Now, one can buy a huge variety of turron, including chocolate, coconut, hazel nut, candied fruit ( most typical of southern Spain). Other Christmas treats are: polvorones (a very dry crumbly cookie made of flour, sugar, cinnamon) peladillas (pine nuts covered with sugar coating) carbon (black crunchy sugar candy - which is put in the shoes of naughty childred by the 3 wise men instead of toys) Hazel nuts, walnuts, almonds and dried apricots (orejones), peaches and raisins are eaten together as a treat. Spanish people celebrate Christmas Eve (nochebuena) with an elaborate dinner together with their extended families. Favorite dishes are: First course: Consome with dry sherry, shrimp, fish - blue hake, besugo, with salads of all kinds and patatas panadera (shredded and fried together with onions) Second course: Roasted turkey stuffed with dried fruits or ground sausage and chunks of bread, together with vegetables. For desert: A tray full of turron, polvorones, peladillas, dried fruit and nuts, flan (sugar glazed custard) sorbete (sherbet) Fine white and red wines are drunk with the meal. The different Spanish regions have variations on the Christmas Eve menu, including products typical of their areas. During the cold weather, roasted lamb and suckling pig are popular. The Spanish people also celebrate New Year's Eve with and elaborate dinner similar to what is described above. Right at midnight, for good luck, as the clock strikes twelve, people eat one grape for every stroke and must have finished their grapes just as the clock reaches 12. Then everybody kisses everybody and they toast with champagne - usually originating in Catalunia, a region on the east coast of Spain.
