I grew up as a Jehovahs witness and I always felt worse when people made a huge deal in making thing separate. All people are different in their beliefs and some are more strict then others, but in general Jehovahs witnesses are kind and will resectfully back away if there is anything that they feel uncomfortable with. Just talk to the person, I am sure they will let you know how they feel, and where they draw the line. For the most part though they will not take part of any holiday events and if they have been practiceing long they will be use to not being involved.

A Material witness is person with information about an alleged criminal. The most recent version, allows a material witness to be held giving criminals proceedings.
It just depends on the family. There is no rule about gift giving on Hanukkah. Some families exchange gifts, and some do not. The only traditional gift during Hanukkah is the gelt (coins)given to children.
It depends on why the witness is not there, what kind of witness it is, what kind of case it is, and what sort of evidence the witness is expected to give. In a criminal trial, the case may be dismissed if there is no witness. Or the trial may be delayed while law enforcement finds and brings the witness to court (if they are ignoring a subpoena). If the witness is ill or travelling, the case may be continued to wait for the witness. If the witness is not key, the parties may proceed without him/her, or they may shift around the order or witnesses to allow that witness to appear later in the trial.
An 'interested' witness is one who has some kind of material stake in the outcome of the case and may not necessarily be an un-biased witness.
