The glass you use for your coffee table will depend on your table. If the edges of the glass are not going to be exposed any glass that fits will work. If the edges of the glass are exposed you will want to find glass that has beveled edges to eliminate the sharp corners and edges of the glass.
Tempered glass is used for safety purposes. If shattered, it will not splintered into dangerous shards; instead, it will crumble into small cubes, just like a car windshield does when broken. That said, thicker glass used for table tops is often NOT tempered because it is not likely to shatter. This is true of tabletops that are 1/2" to 3/4" thick.
