to assassinate like in halo 3 just press the B button to do what i call a super assassination which is the new kind for reach press and hold the B button when you come across some poor unsuspecting soul.

you can still play on maps but they're not the same as halo 1,2,3 or odst halo combat evolved and halo 2 is the only game so far with the same map on the game (blood gulch)except halo2's blood gulch map is updated but the maps can be simmillar to other halo games maps like how the ice map in number 3 is kind of like sidewinder. and on halo reach you can also do forge wich allows you to edit the maps - hope this helps -
