The Pacific Plate and the Indo-Austrialian plate collided. Because one of these plates were older, it sank. This in known as subduction.
Tonga lies approximately north of New Zealand. The Tonga Trench is a continuation of the Alpine Fault and the Hikurangi Trench.

Two plates when pushed upwards and against each other form mountain ranges. The reverse process is when two plates pull away from each other which would result in a canyon. A normal sized river flows due to this, running from north to south on its top. ++++ Plate Tectonics raises uplands and mountain chains, yes, but canyons in such landscapes are incised by rivers. Plate rifting (rather than plates pulling away from each other, which is a constructive plate margin) can create a rift valley such as the Great Rift Valley in Kenya. While such a valley may carry a river it does so by consequence. The last sentence does not really make sense.
The long fin eel lives in lots of locations, it lives in the Tonga Trench in Tonga, it also lives in the streams of New Zealand.
