Due to their traveling nature, vikings had a very wide variety in their diet. They had some basics, but they often ate regionally, depending on where they ended up. Some foods they are known to have eaten:

Meats

beef, mutton, lamb, goat, horse, pork, deer, elk, reindeer, bear, boar, squirrel

Poultry

chicken, geese, ducks, eggs, golden plover, grey plover, black grouse, wood pigeon, lapwing

Seafood

surströmning (sour herring), cod, hakikarl (fermented shark), coalfish, herring, salmon, ling, mackeral, oysters, cockles, mussels, winkles, smelt, eels, scallops, beached whales, porpoises, seals, seaweed

Dairy

goat milk, cow milk, butter, buttermilk, whey, skyr, curds, cheese

Fruit

sloes, plums, apples, blackberries, bilberries, figs, grapes

Vegetables

carrots, parsnips, turnips, celery, spinach, cabbage, radishes, fava beans, peas, beets, angelica, mushrooms, leeks, onions

Grains

barley, rye, oats, rice, millet, buckwheat, hops, flatbread, porridge

Herbs and Seasonings

dill, coriander, cumin, pepper, saffron, ginger, cardamom, cloves, nutmeg, mace, cinnamon, anise, bay leaves, vinegar

Nuts

walnuts, almonds, chestnuts


Mainly land animals. They DID NOT turn cannibal. Also, when vikings invaded villages, they stole a lot of meat.
They ate a wide variety of foods. Basically if you eat it today it was also eaten by the Vikings.
Beef, pork, lamb and mutton were staple meats, sea food was also eaten regularly.
Preserving meat was also very important so they salted, smoked and fermented meats as well. Fowl was also eaten.
If they happened up on a beached whale they would gather the meat from the carcass (I assume if it wasn't to terribly rancid but not having lived back then anythings possible I suppose)
They also ate a wide variety of vegetables as well from carrots to celery and pea's. These were also preserved usually by drying. Apples and a multitude of berries were also widely eaten.
They also ate eggs, made sausages as well as cheese both pressed block and curds, soups and stews were commonplace and breads were made from different grains they had available.
The Viking menu was quite wide and diverse.
Vikings ate a wide variety of foods. Since the Vikings inhabited colder territory, they didn't rely on agriculture. Some of the common foods were- venison, pork, beef, fish, apples, blackberrys,and plums.

They used spoons, knives, pots and pans.

The Vikings usually cooked on an open fire and did not have forks. They didn't need forks anyway because the majority of Viking meals were either hand-held (bread, chicken) or stews.

To eat their meals they used their hands, wooden plates and wooden bowls. Richer Vikings could afford to have metal plates and bowls made for them, but wood was the most commonly used, because Vikings travelled a lot and wood was the most readily available.

They had two meals a day, breakfast and dinner, while occasionally snacking through the day. They didn't have such a thing as lunchtime.
