If they are mad, their body language usually is obvious. They will take the aggressive pose with head high and tail raised, then they may lower their heads and stare directly at you with ears back a bit and hair on their hackles might raise if they are in fight or flight mode (they don't control the hairs consciously). They might snarl, growl, or curl their lips up to expose their teeth. Never stare at a dog directly in the eyes, especially if they are showing signs of being mad, that can be taken as a challenge. Don't reach out to the top of their heads when they are acting aggressive, either, that again is a challenge for superiority or may trigger "fear biting" behavior. Instead, let them come to you after you give comforting reassurance with your voice and if and when you are ready to pet them, reach under their head to pet their chins and not the top of their heads. Many dogs look mad when they are actually in fear and may resort to fear biting behavior. There are many references online for what to do with a fear biting dog, it can be a long and difficult process to turn them around...but it can be done with the right techniques.
