Various chemical constituents in whatever is colored absorb some wavelengths and scatter back the rest. The wavelengths that are not absorbed give you what you see. So something that absorbs all colour wavelengths except yellow, will look yellow. Absorption happens when particular atomic structures have energy levels which match the energies of incoming photons which may be in the visible, or infra-red etc.
