Cows are divided into BREEDS, not species. And what makes each BREED of cows different is colouration, body type and shape, presence of horns or not, and size of horns.
According to a commercial I've seen several times, yes, the happiest cows ARE from California. These commercials are a marketing agenda. As a dairy farmer not from California I can tell you that there are happy cows all over the world, including California, Wisconsin, Pennsylvania, New Zealand, etc. What makes cows happy? Plenty of food, clean available water, a good place to bed, a comfortable environment (in a warm barn when it's cold or a barn with fans when it's hot), and gentle farmers to name a few. What makes cows unhappy? Hot or extreme cold weather, muddy beds, unventilated air supply, bad feed, dirty water, and inpatient farmers to name a few. Why does it matter if cows are happy? Happy cows are low maintenance, make more and better milk, and stay on the farm longer. The bottom line, they make more money for the farmer and produce a higher quality product for the consumer.
