Burning gas and elements caused by a nuclear chain reaction. As the burning gas expands outwards it reaches the surface and cools. The surface is much cooler than the interior.
By this process photons of light are generated and travel from inside the sun to the surface where they scatter in all directions. It can take a million years for one photon of light to escape from a common sun.
The color of the light is dependent on what elements are being burned and the composition of all the other elements that make up the star.
