In order to answer this question effectively I'll explain in terms of lemons' skin and the actual juice. Lemons, like other fruits, have skin and seeds that are largely made up of a complex carbohydrate called cellulose. Humans are unable to digest it; cellulose is also a component of fiber which helps with digestive issues. The juice itself is mostly water and citric acid (hence the category of citrus fruits). Lemons are yellow because it's photosynthetic cells reflect the wavelengths that make things appear yellow rather than absorb it.
you're not going to believe this but lemons have more sugar than lots of other sweeter fruit like strawberries, kiwis and more. Citric acid, water, malic acid (approximately 7 percent of the total acid composition), ascorbic acid (vitamin C, used to prevent scurvy), and finally trace amounts of tartaric acid, fumaric acid, and several others. Lemon juice also contains minor amounts of glucose and other sugars.
