Coffea bushes grow in equitorial regions and the berries are like red cherries when ripe. The fleshy outer coat is removed and the green gray beans are dried in the sun. They are usually exported in this state and are only roasted just before use. Hot but not boiling water is pumped through the grounds after grinding to make an espresso. The Austrians added fig seeds to the mix to make Viennese coffee. Other flavors are added sometimes.
