It is an Islamic phrase that all Muslims say when they start doing any thing in their life. You say "Besmellah" to bless the work in hand. It means a lot to be asking "ALLAH" to grant you the perfection and easiness of what you are doing.

The head must be facing Mecca . You must say bissmilahi rahmanir rahim before you start. You must cut it half way on the neck saying allah huakbar. For every cut. The animal must bleed to death. The animal must be away from other animals so they can't hear or see the slaughter. Hope this helps!
The Qur'an is one book -- it does not have multiple books. However, it is separated by chapter (in Arabic, سورة "Sura"). There are 114 Suras in the Qur'an, each named after a particular theme in that chapter. For example, Sura 19, called "Maryam", talks about Jesus' birth in Israel by the Virgin Mary and is thus named after her. In addition, the Qur'an is divided into 30 "juz" (جزء ; in English, "part" or "section"). It is tradition that on each of the juz is read on a different day of Ramadan, a month in the Islamic calendar.
