Within a word document a right click would display options such as cut/copy/paste/undo, etc. In an excel spreadsheet it might display options for the particular cell that the mouse is hovering above.

Go to the Start button and click it. When it opens up move the arrow over to the right side of the menu in a blank area and right click the mouse button. Click on properties when you see the menu pop up. A window will open up with tabs at the top. Click on the tab for Start Menu. After clicking the tab you'll see to right a button that says Customize.
