Most metals do not react with water, especially at room temperature. It is easier to state which metals DO react with water. Those would be Li, K, Sr, Ca and Na. Those reacting with hot water (steam) would be Mg, Al, Zn and Cu. Most other metals do NOT react with water.
I'll assume your talking about a vigorous reaction and not just an oxidation that most metals will undergo in water. All of the group one elements (sodium & potassium etc) and most of the group two elements (calcium etc) will react vigorously and spontaneously in hot water. Try be a little more specific next time.
the alkali metals have 1 electron in their outer most shell. in order to obtain a full outer shell they have to lose this electron. so when they react with another metal they lose this electron and the outer most shell.
As far as I know, non-metals like Carbon(C) and Sulphur(S) do not react with water. They are tightly binded, so they are insoluble too. Chilax

Mercury forms amalgams with most metals. It can react with non-metals to form to types of compounds: mercurous and mercuric compounds.
Most metals will react with nitrate ion forming the corresponding metal nitrates.
All alkali metals (group 1) and most earth-alkali metals (group 2)
