Convection
Heat (thermal energy) will move between a liquid and a spoon placed in it by the method we call conduction. The thermal energy will be conducted from a hot liquid to a cool spoon by direct contact. There will be a bit of convection in the liquid near the spoon. This is because that liquid (being hotter or cooler than the spoon, depending on the experiment) changes density and either rises or descends. But the point is that direct contact between the liquid and the spoon will set up conditions that allow conduction of the thermal energy.

The temperature of fire can be judged by the colour of the flames if the fuel source is known. For carbon substances, it increases from red to orange to white. Another method, is to use various substances with a high melting point and measure the time required for the end inserted into a flame to begin to melt. A third method is to use a pyrometer, a type of high temperature thermometer, that measures thermal radiation.

Thermal energy is a quantity that can be measured in BTU or Calories. Heat transfer is just a method of transferring that energy from one place to another, or one part of a machine to another part. Heat transfer does not create any energy in itself.
