We don't actually know. The fact that one of the gospels specifically mentions that there were shepherds in the fields watching over their flocks at the time means it almost certainly was NOT winter; the shepherds (and sheep) would not have been out in the fields at night at this time.
Based on that, it can be guessed that it was probably some time between March and November. I'm sure if you pick any month in that period you can find someone who will argue that it must have been that month, but really ... we don't know.
