Probably in Safari you were typing in the URL box (perhaps you didn't realize that is where you cursor was) and a space is not a valid URL character. If you had been in the Safari search box it would be a legal character. So be aware of where you cursor is the next time this happens and I'm sure the ipad is trying to protect you from typing an illegal URL.

Normally, when you edit a document, each time you type a letter, it's placed to the left of the cursor, which moves one space to the right, and any text that already exists is shuffled right. With overtyping, the existing text stays where it is, and each new letter you type simply replaces the existing text.
So that you don't run out of space; at least without knowing ahead of time your estimated time frame.
When you press the back space key while you have the cursor on a cell, you will delete the entire cell. If you want to delete only one character, select the cell, put your cursor in the formula bar at the top of the screen, then press the backspace key (that way you will edit only one character at a time instead of the entire cell).

All you need to do is just press the arrow keys and the cursor will move in the direction of the arrow that has been pressed. If you press and hold the one of the Shift keys at the same time, then it will also select cells as the cursor moves.
