Bella first laid eyes on Edward on page 15 of the book Twilight by Stephenie Meyer.
The book says in Chapter 3 that it was the first night she ever dreamed about Edward Cullen. The dream is immediately explained in Chapter 4.
In the book, Edward tells her in chapter 14, Mind Over Matter.

Edward's eyes were black when Bella first saw him.
In the Forks High School cafeteria
Bella describes Edward's eyes as topaz or liquid gold when he is happy.
If Edward is thirsty, his eyes turn black and he has these dark shades under his eyes. If Edward is 'full', his eyes turn butterscotch color. But, if a vampire drinks human blood, his or her eyes turn red. Usually, Edward's eyes are topaz color, described by Bella.
Bella compares his eyes t the gem called Topaz.
In Twilight? His eyes they were coal black when she first saw him and when he returned they were gold.

Edward's eyes were different because they were golden when he was well-fed on animal blood, and they turned black when he was thirsty and craving human blood. This was a distinct trait of vampires in the Twilight series.
Bella's favorite gem changes as the color of Edward's eyes change from day to day.
when she first sees him he has black eyes because he hasn't hunted yet and when he comes back he has butterscotch eyes because he is not "thirsty" anymore
Because when Bella was pregnant with her she was killing her. She broke her ribs, Pelvis and spine. She was also much more stronger than Bella. In Edwards eyes Bella is much more important
His eyes were black, and he ignored her. He then treated her like she wasn't there or like he hated her. Causing her to dislike him.
