Simple answer: gravity is the force that causes interstellar matter to clump together and gradually collapse into a star. As the matter collapses it reaches a point where fusion occurs (atoms get bashed together to create larger atoms and LOTS of energy). Then a balance is reached between the energy from fusion trying to blow the star apart, and the force of gravity trying to collapse it down.
