As with most night flowering plants the flowers are white ,as they are pollinated by moths and other night flying insects this makes them more easilly seen.

I think you may be referring to the Night Blooming Cereus, or babe in a manger. It blooms once a year I believe, and only at night. When it's fully opened, you can see what looks like a small manger inside.
