I would recommend to go to the pantanal national Park .Unlike the amazon it is the best place to see wildlife which includes:
cappybaras, jaguars, giant ant eaters ,marsh deer, caiman, white lipped peccary ,monkeys ,coati, armadillos, owls, birds of prats of birds and a wide range of butterflies.
If you are going to the pantanal i would recommend a good place to stay is the pantanal Moto Goso Hotel.

Yes the Biltmore Inn is a good place to stay. It is in a good location, not a bad neighborhood and the rates are very reasonable. I would recommend staying at this hotel for the night.

I would recommend looking at craigslist.org. They have housing rentals and sublets available in a wide variety of locations. A sublet may be an ideal option until you can find a long term solution.

These sites will provide hotels and flights that can be booked as a single package. Virgin holidays also offer packages to Brazil. Rio.com is a specialist site specifically for holidays to Brazil. What site works for you though really depends on your travel dates and your accomodation requirements, as well as where in Brazil you would like to stay.
This question is kinda up to personal preference, I would recommend a restaurant run by locals, and a place that has been getting good reviews by local newspapers. I would stay away from chains, because they will be the same everywhere.
