Donkeys were purchsed from at least one of the Greek Islands on the way to Gallipoli. The troops landed at Lemnos Island and purchased donkeys to be used as water carriers for the troops. Those that survived being pushed overboard to reach the shore (donkeys cannot swim) were forgotten until ANZAC legend Simpson started using one to help carry wounded from the front lines down to the medical tents. Simpson and the donkey would acrry water up to the men fighting, and carry the injured soldiers back, because there were not enough stretcher-bearers for the task. Although Simpson is the most famous soldier known to use donkeys to carry the wounded, when he was killed, others took over the donkey and the task. Even when the ANZACs were evacuated, Simpson's donkey was not left behind, but also evacuated off th island. It is unknown what happened to him then - there were reports he was stolen when the troops docked back at Lemnos, but chances are that the donkey smelt home, cast off his shackles and escaped of his own accord.

Why were the ANZACS fighting the Turks?

Australia and New Zealand were part of the British Commonwealth, which was one of the Allies in World War I. The Ottoman Empire was one of the Central Powers. Those facts naturally brought the ANZACs into conflict with Turks. The ANZACs were specifically sent to the Turkish front in Gallipoli so that British soldiers could focus on the Western Front which was closer to London and made maintenance much easier. Giving the command of the Turkish front over to foreign regiments was much easier to justify.

Why did the ANZACs use donkeys instead of horses?

I wasn't aware that they did, although I know that they used mules. Both mules and donkeys are more intelligent and faithful than horses. They can also survive better in desert conditions as they barely sweat. US and British Army regulations state that 5 mules must be kept on the rations of 3 horses, showing that they are much cheaper to keep.
