Cannon and mortars. Catapults, trebuchets and ballistae were large, cumbersome, and were limited in how forceful the the projectile could be. Cannon balls powered by gunpowder were't so limited. Cannon, mortars and other artillery were more easily transportable, could fire a couple of times per minute, and cannonballs could knock down the stone walls of most castles.
The catapults have not influenced modern society much. They were the artillery of antiquity and Middle Ages. They were superseded by the spread of the use of the cannon in the 14th and 15th centuries.
