Only Conner or Donner, but they are not exactly words that can easily fit into a decent poem. A rhyme does NOT, necessarily, have to be a single word, however. Instead, you may be able to find a way to keep the rhyming sound by using two words: "We are here to pay all honour / to the men who served upon or / with the ships that never made it home." Otherwise, it may be better to consider using a different word, other than "honour," or to place "honour" elsewhere in the line so that you are not trying to rhyme with it.

A word that rhymes with steel and has the same meaning as hide is conceal. As far as I know that is the only synonym that rhymes with steel. Other words for hide are veil, mask, shroud, pall, cover and screen.
