What scientific reason do you give for not changing eggs form scrabbled to poach?

Personally I wouldn't do that because I prefer scrambled eggs.
I suspect the answer to this is the second law of thermodynamics -- entropy always increases. There is higher entropy in scrambled eggs than poached eggs.
However it is possible to reduce entropy in subsystems -- air conditioners do it and a machine could be invented to turn scrambled eggs into poached eggs.
