The two ghosts in the prison are those of the warden and the prisoner. To speak with the warden, you have to set the plate of Hot Cross buns on the table in the Warden's Office. He will then give you information on the prisoner. After you enter the prisoner's cell, the Warden will lock you in. Push aside the bed and enter the tunnel. Accquire the pickaxe and sardines, and at the top of the tunnel, speak with the prisoner. Use the pickaxe to dig a new tunnel in the left side of the cell to escape.
