In general, you will want to gem for Spellpower/Resilience or Spellpower/Stamina in PvP. Spellpower enhances the power of your spells, and the strength of a Druid in PvP is placing HoTs which are instant cast while on the move. Resilience and Stamina will help you survive being targeted longer.
Play a few games with such a setup, and feel for yourself whether you get killed too quickly, or need more healing power. Then re-adjust your gems favoring more spellpower or more resilience/stamina depending on this.
Gemming may change according to your current gear level as well, so it usually pays to find a more experienced PvP resto Druid on your server and ask him/her for advice on gemming, gearing and playstyle. Check the armories of players with good PvP scores, and see how they gear and gem, or even what team combos they play (if Arena is what you are interested in).
Balance, go with all zee balance thingys.
It really depends on your gear, but the most common druid that I've seen that worked well(in pvp) is the windy druid. go to shadowdiablo.com to look through the different clones and try to make your own according to the good builds there.

Yes, free attacks and spells work well in PVP and PVE. Getting free damage from Omen of Clarity proccing is a a good thing.
It depends on your playing style. Many say the Druid Ryan is the worst, yet if you know how to use him you can beat anyone in pvp. Best I can say is to try them all out and find one that works for you.
Mages are more dmg with spells and stuff but druids are genrelly strong if they are feral spec and attack in cat form. Depends on how smart and geared each of them is. Also depends on what specs each of them are and if they spec'd for pvp or pve.
There is no pvp. They came out with pvp a few months ago and are still updating it.

Leather-working pretty good for any leather wearer engineering for the things you can put on your gear herbalism for Lifeblood, the self heal (they recently changed this to haste and a small heal) mining for the toughness skinning for the crit. i don't pvp so this might be a little off, but i would personally take skinning and mining to stay alive and kill other players faster
