For medium pork, the internal temperature should be 140 to 145 degrees F.

Internal temperature of pork needs to reach 145° to kill bacteria, so I would cook it to 140° and let it rest 15 minutes to reach an internal temperature of 145°
Cook fresh pork to 160 degrees Fahrenheit. Fresh pork cooked to medium doneness as measured with a food thermometer may still be pale pink inside but will be safe.
Most say 160 but i like to go to 165.
