Anywhere between 195 and 230 or is is common. Some run hot, some run cool. Anywhere in between there is just fine. The fans don't even come on until 224.

The diagraim is under the hood. Look harder
If it has a Northstar series engine, it is under the intake manifold right in the middle of the valley and contacts the top of the flywheel.
