If it is the type of bear that does not climb trees, you can escape that way also and wait for the bear to become bored and leave.
That all depends on the bear. With grizzlies and brown bears, playing dead is your best option of staying alive. But with more aggressive bears like with black bears, you MUST fight back with anything you have: knife, stick, fist, feet, backpack, etc. Hit the nose, holler like mad, anything you can to make the bear reconsider eating you.
