I'm not entirely certain how to compare the two.
Going by length, it's not even a contest: the Great Wall is over ten times longer than the Grand Canal.
However, by total volume, which is perhaps a better measure of how much work was required to build it ... I can't actually find any figures for this, but I suspect the Grand Canal may be larger.
