That is a broad question but I would have to say some of the most important subjects would be digital audio & theory, a recording class of some sort, depending on which software you, the school or the business uses. Music Theory, media arts, and of course math because, audio technology, or sound engineering, media production, music production which are all basically similar degrees are a science.
If you want to become a sound engineer, you most likely will have to take a full program of several different, but related, courses. For example, at Video Symphony TV and Film school, the curriculum includes 39 separate courses, including sound design, post production sound, pro tools essentials, voice over recording and production, etc. These subjects plus many more make up a full audio engineering program.

It depends on the course you will be studying, the college you will study at and the quality of your school leaving qualifications. In a country which has very well regarded school leaving qualifications there is less likelihood of an entrance exam being required. For countries where school graduates are of varying quality an entrance exam will be required. It is best to ask the college directly what their requirements are.
