5. Put cooled rice onto seaweed and spread evenly.

6. Put desired filling in.

Almost none. All sushi is raw fish, rice, and wasabi, except Tamagoyaki, which is egg sushi; a slice of cooked egg is replaces the fish and is wrapped with a thin slice of laver (seaweed).

I have seen both cooked and raw squid on nigiri-zushi in Japan. Cooked squid was more common.

I don't think that they do much to sushi before they cook it. It is raw. I wonder if they do put some seasoning or sauce on it? I bet it is up to the person eating it.
