What temperature does it has to be to sink a boat?

Temperature has nothing to do with it. But if water freezes it can cause the hull of a boat to be crushed which would make the boat leak and sink when the ice thawed. Some boats are designed to resist ice pressure and they are pushed up a small amount by the ice.
