A 180 degree will work just fine. You could go as high as 190 if you live in a cold climate and drive relatively short trips. In that case the 190 would help you warm up a little quicker but for most applications 180 is probably best.
Follow the upper radiator hose from the radiator to the engine. It is attached to the thermostat housing. Removing the thermostat housing will expose the thermostat.
Your local auto parts store should help you with that.
The sensor for the temp gauge in the 96 S10 4.3L would be the sensor located between #3 and #5 spark plugs, it has one wire plugged to it. The temp sensor for the ECM is located next to the thermostat housing, it has two wires plugged to it.

With engine cool, drain off aprox 2 qts of coolant from the radiator, remove upper radiator hose from thermostat housing, remove thermostat housing, remove thermostat and seal, reverse order to install, make sure thermostat spring is facing into the engine.
