There are a few staples.

Zhou (pronounced JOE) is a soup-like rice gruel sometimes including beans, meat or other vegetables.

Baozi (pronounced BOWZUH) is kind of like a breakfast hot pocket. It is bread with meat and/or vegetables in the middle.

Youtiao (pronounced YOTYOW) is like a long loafish donut (the Chinese literally means oil strip), but usually never anything inside or sprinkled on the outside. A plain oil fried pastry.

Jianbing (pronounced JEEYANBING) is an egg pancake wrapped up and eaten by itself or with a crunchy middle. Sometimes you might find sausage, lettuce and seasoning wrapped up inside.

Doujiang (pronounced DOUGHJEEYANG) is basically soymilk. Sometimes they put tapioca in it.

Noodles some may eat noodles for breakfast. One notable fast food chain called 'Zhengongfu,' or 'Real Kung Fu,' serves noodle dishes for breakfast.

Fastfood Yeah, people eat egg McMuffins in China, too.

Common breakfast staples may be different from province to province, and even varies between people of different socioeconomic status. In the poorer countryside, for example, I usually ate leftovers from dinner the evening before or had some kind of hash made of as-yet-unused scraps. In Beijing, I pass twenty McDonalds restaurants everyday on my way to work.
