My grandfather from Greece always liked to prune in Feburary just before everything came back to life around March. He seemed to have healthy and productive plants and really sweet wine. So Feb. would be my educated guess.
Prune in late winter, or early spring before the sap rises too much.

Well I planted them in early spring and I got grapes like late summer and fall. But I didn't grow from seeds I did a plant, which is much easier! Hope I helped. :)

Do you mean how do you "say" fall harvest in Italian? If so, the Fall Harvest Festival in Italy would be La Festa Della Vendemmia. "Fall Harvest" without the word festival would be Vendemmia. It's an exciting time in Italy. It's when the grapes are crushed for wine and there is a lot of celebration.
