This is an interesting question. The original 1/2 hour shows started with Matt making a speech while he was walking out on Boot Hill (the burial site located out from town). The markers clearly show dates of 1872 and 1873. Now, Dodge City wasn't really Dodge City until 1872, and then they didn't get a Marshall there until 1875. If we suppose that the writers are trying to stay true to life, then I would say from 1875 on. Guns, gunbelts, rifles, saddlery, etc., are not true to period, but so what?! Just sit back and enjoy the story.
On an episode (1969) called Mannon ( Steve Forrest) Kitty asks Mannon “What are you doing in Dodge City”? Mannon replies that he’s here to kill Marshal Dillon . And procedes to say if not for men like him( fighting in “ The War” that Dodge City wouldn’t be here. That’s when Kitty says the war has been over 10 years ago. So I’m going to estimate 1874/75 . Makes sense to me?
My estimation throws the timeline off. If you look close to the markers on the early episodes some say 1882 or 83. If that's so the Gunsmoke movies in the 1980s and 90s would've taken place in the early 1900s
