It is only baby hamsters' that do this. They usually flip over on their back and start screeching when you try to pick them up. This only happens with a baby hamster that has had very little, or no handing by human hand at all since birth. It is fear, he is frightened because he does not know what to expect from you. Once he's been handled a few times and realises he is safe in your hands he will stop doing it.
